Rajgeera Halwa
Rajgeera or Amaranth flour is eaten while fasting (vrat) and makes for a tasty halwa recipe for navratri. Ingredients
Serves - 4
Rajgeera Atta - 1cup
Ghee - 1cup
Sugar - 1cup
Water - 2 cups
Nuts Chopped - handful
Method
Mix water & sugar and bring to a boil and remove. The idea is to just dissolve the sugar and not reduce it.
In a pan heat the ghee and add atta. Cook on a slow flame till the colour gradually changes into a golden brown.
At this stage add the syrup and on slow flame cook till it absorbs all the water. Cook for some more time till the ghee ooze out of the sides of the halwa. Serve hot.
